Spiced Agave Chicken

Alex’s job is currently not so conducive to healthy living.  The 30+ hour shifts combined with blah hospital food has equaled a 15 pound gain for my husband. Thankfully, he’s always had good self-control with the sweet stuff. His weaknesses are more along the lines of In & Out and Papa John’s. Poor guy, I can’t wait for this rotation to be o.v.e.r.

Healthy meals in our home have since become a necessity. But, they still need to taste good and be filling! I started browsing through Cooking Light’s Way to Cook and came across the broiling section. It goes over how to broil fish, meats, veggies, etc. The layout is excellent- it goes over various healthy methods of cooking with recipes that relate to that section. I tend to forget about my broiler. Well, this dish will help me remember. Broiling is so fast and easy! The spices give the chicken its underlying flavor with the tangy and sweet baste on top. Add a side of veggies and you’ve got dinner in no more than 20 minutes.

Spiced Agave Chicken

2 teaspoons garlic powder
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon ground red pepper
8 to 10 chicken breast tenderloins or 4 boneless chicken breasts, thawed if frozen
6 tablespoons agave nectar or honey
2 teaspoons cider vinegar

Preheat broiler. Line broiler pan with aluminum foil and coat the foil with cooking spray.

Combine first 6 ingredients in a large bowl. Add chicken to bowl, and toss to coat. Place chicken on lined broiler pan. Broil chicken 5 minutes on each side.

Combine agave nectar and vinegar in a small bowl, stirring well. Remove chicken from oven, brush 1/4 cup agave mixture on chicken. Broil 1 minute. Remove chicken from oven and turn over. Brush chicken with remaining agave mixture. Broil 1 additional minute, or until chicken is cooked through.
