Egg in a Basket, aka Bird in a Nest, aka sunshine toast, etc etc. Whatever you call it, it is super easy to make and tastes delicious. This morning we woke up around 9ish, and originally had intended to make a more elaborate breakfast. Time ran short, so I just went with this, which I actually had never made since we’ve been married- weird. I have a big box of plastic cookie cutters, and almost went with a star, but thought the heart was the perfect size.
Here’s all you do…first, heat up a skillet to medium. When it’s nice and hot, add a tablespoon or so of either oil or cooking spray to the pan. Cut out the hole in the bread with a cookie cutter or use the bottom of a round glass. If you want it extra crispy, butter the bread, then place it butter-side down into the pan. Crack an egg into a small bowl. Right after, pour the egg into the hole in the bread, add a sprinkle of salt and pepper if you prefer, and let cook for about 3 minutes. Turn over the bread/egg with a spatula to cook the other side to your desired doneness. We like the yolks a tad runny so it soaks into the bread…yummmmmy.
